This recipe is sooo easy to make---everything can be done ahead of time, even the day before! 
Healthier than frying, less clean-up and more time to enjoy time with friends/family and that cold one that would go so well with the meal!

Marinate 3lbs of chicken parts (skin on or off) in the following for 3hours or up to 12hours in ziploc bag..

2c. buttermilk, juice of 1/2 lemon, 1 TBSP of hot sauce, 2 TBSP ALMA FOODS Portuguese Smoked Pepper (paste), 3 cloves minced garlic, 5 sprigs of fresh thyme, kosher salt/pepper.

Mix 2c crushed cornflakes, 3TBSP ALMA FOODS PSP (dried), and 2tsp chopped fresh thyme in a shallow pan.  Remove chicken from marinade, letting excess drip off, and dredge through the cornflake mixture, pressing to adhere.

Place on wire rack-fitted sheet tray and bake for 45 minutes until golden and crisp.  Say bye-bye to KFC's Extra Crispy chicken cause you just made a better version---booya!!

Serves 4-6

Sort and wash 1# dried black-eye peas; cook using the overnite soak method or the quick-soak method. Do not use any extra flavoring. Drain, and set aside in a bowl.

Dice 1 red pepper, 1 yellow pepper, 1/2 small red onion, 1 carrot. Chop 1 bunch fresh cilantro.

Add to beans in bowl.

Prepare 1 package ALMA FOODS Portuguese Red Pepper dry rub according to directions on package. Add, to taste, to your favorite mayonnaise or scratch-made aoili.

Add the dressing, to taste, to the beans and vegetables stirring well to mix. Refrigerate for an hour, or longer, stir again and serve. Best at room temperature.

Note: for a vegan version, add the prepared paste directly to the bean and vegetable mixture, to taste.

Last minute guests coming over?  This super simple recipe will have your unexpected arrivals thinking you slaved away in the kitchen all morning....

  • Mix each flavor package of ALMA FOODS according to package directions.
  • Place a small piece of good-quality sardines on a water cracker. 
  • Top with a dollop of paste; repeat until all sardines and paste mixes have been used.
  • Drizzle with extra-virgin olive oil and garnish with parsley sprigs.
  • Serve.

Prepare Alma Foods Lemongrass rub as directed on package.  Add 1/2 to whole ripe mashed avocado and 1/2c sour cream.  Stir well and serve with your favorite tortilla chips, crackers, or crudites.

Using a scratch-made aioli or a good quality mayonnaise, add to taste.  Prepared Alma Foods Portuguese Red Pepper as directed on package OR use dry from the package.   Use as a dressing for potato/pasta/grain/meat, salads, or as a condiment on your favorite deli sandwiches.
